  • 12 oz spaghetti
  • 3 tbsp olive oil
  • 4 garlic cloves
  • 2 cups cherry tomatoes
  • 1 cup sun-dried tomatoes
  • 2 tbsp tomato paste
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup pasta water
  • 0.25 cup fresh basil leaves
  • 0.5 cup Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Cook for 1-2 minutes until fragrant, but not browned.

Halve the cherry tomatoes and add them to the skillet with a pinch of salt. Cook for 4-5 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.
