  • 1 pound ground beef
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 8 ounces tomato sauce

  • 4 large, peeled and cubed russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 2 sliced thinly green onions
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute.

Add ground beef to the skillet and cook until browned, breaking it up with a wooden spoon. Sprinkle with salt and black pepper.

Stir in tomato sauce and let it simmer for 5 minutes. Set aside.
