  • 12 pounds Whole turkey
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Kosher salt

Directions

Step 1

Preheat your oven to 325°F (165°C). Place a rack in a large roasting pan.

Remove the giblets and neck from the cavity of the turkey. Rinse the turkey thoroughly under cold water and pat it dry with paper towels.

Place the turkey on the roasting rack and tuck the wingtips underneath to prevent burning.

Using your hands, gently loosen the skin over the breast area. Spread 2 tablespoons of unsalted butter evenly under the skin of each breast half.

Rub the outside of the turkey with the remaining 2 tablespoons of unsalted butter. Sprinkle the kosher salt generously over the skin, ensuring even coverage.

Insert an oven-safe meat thermometer into the thickest part of the turkey breast, making sure not to hit the bone.
