Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.5 cup rolled oats
  • 0.25 cup cornmeal
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter
  • 0.75 cup buttermilk
  • 1 tablespoon honey

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, cornmeal, baking powder, baking soda, and salt. Whisk until evenly combined.

Step 3

Cut the cold unsalted butter into small cubes, then add it to the flour mixture. Use a pastry cutter or your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the buttermilk and honey until well combined.

Step 5

Slowly pour the buttermilk mixture into the flour mixture. Use a fork or wooden spoon to stir just until the dough comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface. Gently knead it 2-3 times to bring it together into a cohesive ball.

Step 7

Pat the dough into a 1-inch thick circle. Use a 2.5-inch biscuit cutter to cut out biscuits, reforming and patting out the dough as needed to cut additional biscuits.

Step 8

Place the biscuits onto the prepared baking sheet, spacing them about 2 inches apart.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown.

Step 10

Remove the biscuits from the oven and let them cool slightly on the baking sheet before serving. Enjoy warm with your favorite spreads or toppings.
