Ingredients

  • 20 pieces Jumbo pasta shells
  • 2 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 1 cup Grated Parmesan cheese
  • 1 large Egg
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 4 cups Marinara sauce
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook until al dente, according to package instructions. Drain and rinse with cold water to stop the cooking, then set aside.

Step 3

In a large mixing bowl, combine ricotta cheese, 1 1/2 cups of shredded mozzarella, 3/4 cup of grated Parmesan, the egg, chopped parsley, salt, and black pepper. Mix until evenly blended.

Lightly grease a 9x13-inch baking dish with olive oil. Spread 2 cups of marinara sauce evenly over the bottom of the dish.

Fill each cooked shell with 1 to 2 tablespoons of the cheese mixture and place the filled shells into the prepared baking dish, open side up.

Pour the remaining marinara sauce over the stuffed shells, making sure to coat them completely. Sprinkle the remaining 1/2 cup of mozzarella cheese and 1/4 cup of Parmesan cheese evenly on top.

Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let the dish rest for 5 minutes. Garnish with additional chopped parsley if desired, and serve warm.
