Ingredients

  • 200 grams Green beans
  • 200 grams Kidney beans (cooked or canned, drained and rinsed)
  • 200 grams Chickpeas (cooked or canned, drained and rinsed)
  • 1 small Red onion, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 6 pieces Dried apricots, finely chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Bring a pot of salted water to a boil. Trim the ends of the green beans and cut them into bite-sized pieces.

Blanch the green beans in the boiling water for 3 minutes, then immediately transfer them to an ice bath to stop the cooking. Drain and set aside.
