Ingredients

  • 4 cups Coconut milk
  • 1 lb Chicken breast (sliced thinly)
  • 2 cups Chicken broth
  • 2 Lemongrass (stalks, bruised and cut into 2-inch pieces)
  • 4 slices Galangal (sliced)
  • 4 Kaffir lime leaves (torn into pieces)
  • 8 oz White mushrooms (sliced)
  • 3 Thai bird’s eye chilies (smashed)
  • 3 tbsp Fish sauce
  • 3 tbsp Lime juice
  • 1 tbsp Palm sugar (or brown sugar)
  • 1 tbsp Fresh cilantro (chopped)
  • 2 Green onions (sliced thinly)
  • 0 Salt (to taste)

Directions

Step 1

In a large pot over medium heat, add the coconut milk and chicken broth. Stir gently and bring to a simmer.

Step 2

Add the bruised lemongrass, galangal slices, and torn kaffir lime leaves to infuse the broth. Simmer for 5 minutes to release their aroma.

Step 3

Add the thinly sliced chicken to the pot and cook for 6-8 minutes, or until the chicken is cooked through.

Step 4

Toss in the sliced mushrooms and simmer for another 5 minutes until they are tender.

Step 5

Add the smashed Thai bird’s eye chilies, fish sauce, and palm sugar. Stir until the sugar dissolves. Taste and adjust with salt if needed.
