Ingredients

  • 6 pieces Large ripe tomatoes
  • 300 grams Ground pork
  • 2 pieces Shallots
  • 3 pieces Garlic cloves
  • 2 tablespoons Fish sauce
  • 1 teaspoon Sugar
  • 0.5 teaspoon Ground black pepper
  • 2 stalks Green onions
  • 2 tablespoons Cooking oil
  • 2 tablespoons Tomato paste
  • 1 cup Water
  • 1 teaspoon Salt

Directions

Step 1

Wash the tomatoes and cut off the tops to create lids. Set the lids aside. Scoop out the seeds and pulp using a spoon, being careful not to pierce through the outer skin. Reserve the pulp in a bowl for later use.

Step 2

Peel and finely mince the shallots and garlic. Chop the green onions, separating the white and green parts.

Step 3

In a mixing bowl, combine the ground pork, minced garlic, minced shallots, white parts of the green onions, fish sauce, sugar, and ground black pepper. Mix well until fully combined.

Stuff each hollowed-out tomato with the pork mixture, pressing it in tightly. Place the tomato ‘lids’ back on top to cover the stuffing.

Heat a large skillet or shallow pan over medium heat. Add the cooking oil and swirl to coat the bottom.
