Ingredients

  • 4 cups Vanilla ice cream
  • 2 cups Whole milk
  • 1 teaspoons Vanilla extract
  • 1 cup Frozen strawberries
  • 4 slices Focaccia bread
  • 1 cup Mascarpone cheese
  • 8 Fresh strawberries
  • 2 tablespoons Honey
  • 2 tablespoons Butter
  • 1 tablespoons Powdered sugar

Directions

Step 1

Start by preparing the thick shakes. In a blender, combine the vanilla ice cream, whole milk, vanilla extract, and frozen strawberries. Blend until smooth and thick, adding more milk if needed to reach the desired consistency. Pour the shakes into four tall glasses and refrigerate while you make the panini.

Step 2

Prepare the panini filling by mixing mascarpone cheese and honey in a small bowl until smooth.

Step 3

Slice the fresh strawberries thinly.

Step 4

Spread the mascarpone mixture evenly on one side of each slice of focaccia bread. Top two slices with fresh strawberries, then close the sandwiches with the remaining two focaccia slices (mascarpone side down).

Step 5

Heat a skillet or panini press over medium heat. Spread butter on the outside of each sandwich to create a golden crust.

Step 6

Cook the panini for 3-4 minutes on each side, or until the bread is golden brown and crisp, and the mascarpone is warm and slightly melty.

Step 7

Remove the panini from heat and slice each sandwich in half diagonally.

Step 8

Dust the panini with powdered sugar and serve immediately with the chilled thick shakes on the side.
