Ingredients

  • 10 whole (medium) Roma tomatoes
  • 2 medium Carrot
  • 1 medium Zucchini
  • 1 medium Bell pepper (red or yellow)
  • 1 medium Yellow onion
  • 4 large Garlic cloves
  • 2 tablespoons Tomato paste
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Granulated sugar
  • 2 tablespoons, chopped Fresh parsley (optional)

Directions

Step 1

Wash and chop the Roma tomatoes into quarters. Peel and dice the carrots, zucchini, and bell pepper into small chunks for an even cook.

Finely chop the yellow onion and mince the garlic cloves.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until fragrant and translucent.
