Ingredients

  • 200 grams dark chocolate (70% cocoa)
  • 150 grams butter (unsalted)
  • 150 grams granulated sugar
  • 150 grams almond meal
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 tablespoon cocoa powder (optional, for dusting)

Directions

Step 1

Preheat the oven to 170°C (340°F). Grease and line a 22cm (9-inch) round cake tin with baking paper.

Step 2

Place the dark chocolate in the Thermomix bowl. Chop for 10 seconds on Speed 8 until finely ground.

Step 3

Add the butter to the Thermomix bowl. Melt the chocolate and butter together for 3 minutes at 50°C on Speed 2, or until smooth and glossy.

Step 4

Add the sugar, almond meal, vanilla extract, and salt to the bowl. Mix for 10 seconds on Speed 4 until well combined.

Step 5

With the Thermomix running on Speed 3, add the eggs one at a time through the lid, allowing each egg to fully incorporate before adding the next.

Step 6

Scrape down the sides of the bowl with a spatula and mix again for 5 seconds on Speed 4 to ensure a uniform batter.

Step 7

Pour the batter into the prepared tin and spread evenly.

Step 8

Bake for 30–35 minutes, or until the cake is set and a skewer inserted into the center comes out with a few moist crumbs.

Step 9

Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Once cooled, dust the top with cocoa powder, if desired, before serving. Enjoy!
