  • 1.5 pounds Beef stew meat, cut into 1-inch cubes

  • 1 teaspoon Black pepper
  • 1 Yellow onion, diced
  • 4 cloves Garlic, minced
  • 4 Carrots, sliced into rounds
  • 3 Celery stalks, diced
  • 2 Russet potato, peeled and cut into 1-inch cubes
  • 1 Zucchini, diced
  • 14.5 ounces Canned diced tomatoes
  • 6 cups Beef broth
  • 1 Bay leaf
  • 1 teaspoon Fresh thyme, chopped
  • 1 cup Frozen green beans, cut into 1-inch pieces
  • 1 cup Frozen corn kernels
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 3

Add the beef to the pot in batches, searing the cubes on all sides until browned. Remove beef and set aside.
