Ingredients

  • 16 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 4 tbsp All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 2 cups Sharp cheddar cheese, shredded
  • 1.5 cups Gruyère cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 0.5 tsp Garlic powder
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Panko breadcrumbs (optional, for topping)
  • 1 tbsp Olive oil or melted butter (optional, for breadcrumbs)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan over medium heat, melt the butter. Sprinkle in the flour and whisk constantly for 1-2 minutes to form a roux.

Step 3

Slowly pour in the whole milk and heavy cream, whisking constantly to prevent lumps. Continue cooking for 4-5 minutes until the mixture thickens slightly.

Step 4

Reduce the heat to low and stir in the Dijon mustard, garlic powder, paprika, salt, and black pepper.

Step 5

Gradually add the shredded cheddar, Gruyère, and Parmesan cheeses, one handful at a time, stirring until completely melted and smooth.

Step 6

Combine the cooked macaroni with the cheese sauce in a large mixing bowl, stirring until all the pasta is evenly coated.

Step 7

If desired, transfer the macaroni and cheese to a baking dish and preheat the oven to 375°F (190°C).

Step 8

For the breadcrumb topping, combine panko breadcrumbs with olive oil or melted butter. Sprinkle the mixture evenly over the macaroni and cheese.

Step 9

Bake the dish for 10-15 minutes, or until the topping is golden brown and crispy.

Step 10

Let the macaroni and cheese cool for a few minutes before serving. Enjoy!
