Slice the halloumi cheese into 1 cm thick slices.
Peel and thinly slice the onion.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and caramelized, about 8-10 minutes. Remove from the skillet and set aside.
In the same skillet, add the halloumi slices and cook for 2-3 minutes on each side until golden and slightly crispy. Remove and set aside.
Slice the tomato into thin rounds and sprinkle with a pinch of salt and black pepper.
Lightly warm the pita bread by placing it in the oven at 180°C (350°F) for 2-3 minutes or heating it in a skillet for 1 minute on each side.
Assemble the sandwich by layering the cooked halloumi, caramelized onions, tomato slices, and fresh mint leaves inside each warmed pita bread.
Drizzle the remaining olive oil over the filling before folding or closing the sandwich.
Serve immediately while warm and enjoy!
