  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Peel and chop the sweet potatoes into small chunks. Boil them in a large pot of salted water until fork-tender, about 15 minutes.

While the sweet potatoes cook, finely dice the onion, carrots, and garlic.

In a large skillet, heat the olive oil over medium heat. Add the onion and carrots and sauté until softened, about 5 minutes.
