Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Vegetable oil
  • 1 large Onion, finely chopped
  • 4 Garlic cloves, minced
  • 1 tablespoon Ginger, minced or grated
  • 2 cups Tomato puree (passata)
  • 0.25 cup Cashews
  • 0.5 cup Water, warm
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garam masala
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 0.5 cup Heavy cream
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat a large pan over medium heat. Add the butter and vegetable oil. Once the butter is melted, add the chopped onion and sauté for 5-6 minutes until soft and golden.

Step 2

Add the minced garlic and ginger to the onions and cook for an additional 1-2 minutes until fragrant.

Step 3

Add the tomato puree to the pan and cook for 5-6 minutes, stirring occasionally, until the oil starts to separate from the mixture.

Step 4

Meanwhile, in a blender, combine the cashews and warm water to create a smooth paste. Add the cashew paste to the tomato mixture and stir well to combine.

Step 5

Stir in the ground coriander, cumin, garam masala, Kashmiri red chili powder, salt, and sugar. Let it simmer for 8-10 minutes, stirring occasionally, until the flavors meld together and the sauce thickens slightly.

Step 6

Reduce the heat to low and stir in the heavy cream. Let it cook for an additional 2-3 minutes, ensuring the sauce is smooth and creamy.

Step 7

Taste and adjust the seasoning if needed. Optionally, garnish with fresh cilantro before serving.

Step 8

Use the sauce immediately as a base for your favorite dishes or cool it completely and store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month.
