Ingredients

  • 3 cups Powdered sugar
  • 0.25 cup Unsalted butter
  • 3 tablespoons Heavy cream
  • 2 teaspoons Peppermint extract
  • 12 ounces Dark chocolate
  • 1 tablespoon Coconut oil or shortening

Directions

Step 1

In a large mixing bowl, combine the powdered sugar, unsalted butter, heavy cream, and peppermint extract.

Step 2

Use a hand mixer or a stand mixer on low to medium speed to blend the ingredients until they form a smooth and cohesive dough.

Step 3

Lightly dust a clean work surface with powdered sugar to prevent sticking. Roll out the peppermint dough to about 1/4-inch thickness.

Step 4

Use a small round cookie cutter (approximately 1.5 inches in diameter) to cut out circles from the rolled dough. Place the circles on a parchment-lined baking sheet.

Step 5

Transfer the baking sheet to the freezer and let the patties chill for about 20-30 minutes, or until firm.

Step 6

While the patties are chilling, melt the dark chocolate and coconut oil (or shortening) together in a double boiler or in 30-second intervals in the microwave, stirring in between until smooth.

Step 7

Remove the peppermint patties from the freezer. Dip each patty in the melted chocolate, using a fork to lift it out and allowing the excess chocolate to drip off.

Step 8

Place the coated patties back onto the parchment-lined baking sheet. Repeat until all patties are coated.

Step 9

Let the patties set at room temperature or transfer them to the refrigerator to speed up the setting process.

Step 10

Once the chocolate is firm, the peppermint patties are ready to enjoy. Store them in an airtight container at room temperature or in the refrigerator for a cool treat.
