Ingredients

  • 2 cups rolled oats
  • 0.5 cup peanut butter (creamy or chunky)
  • 0.5 cup honey
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.75 cup semi-sweet chocolate chips
  • 0.5 cup chopped nuts (optional, e.g., almonds, walnuts)
  • 0.5 cup dried cranberries or raisins (optional)

Directions

Step 1

In a large mixing bowl, combine the rolled oats, salt, chocolate chips, chopped nuts (if using), and dried cranberries (if using). Stir to distribute evenly.

Step 2

In a small microwave-safe bowl or saucepan, combine the peanut butter and honey. Heat in the microwave for 20-30 seconds or on low heat on the stove until warm and easily stirrable.

Step 3

Add the vanilla extract to the melted peanut butter and honey mixture and stir until well combined.

Step 4

Pour the wet mixture into the bowl with the dry ingredients. Using a spatula or your hands, mix everything together until the oats are fully coated and the mixture is evenly combined.

Step 5

Line an 8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal. Transfer the mixture into the pan and press it down firmly with the back of a spoon or your hands to create an even, compact layer.

Step 6

Refrigerate the pan for at least 1 hour to allow the mixture to firm up.

Step 7

Once set, use the parchment paper overhang to lift the treats out of the pan. Place them on a cutting board and cut into 12 bars or squares.

Step 8

Store the bars in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage. Enjoy!
