Ingredients

  • 4 scoops Vanilla ice cream
  • 2 cups Cornflakes (crushed)
  • 0.5 cup Sweetened shredded coconut
  • 1 teaspoon Ground cinnamon
  • 2 large Eggs
  • 2 tablespoons Milk
  • 4 cups Vegetable oil
  • 4 teaspoons Honey
  • 1 cup Whipped cream
  • 4 pieces Maraschino cherries

Directions

Step 1

Scoop the vanilla ice cream into four even-sized balls. Place them on a baking sheet lined with parchment paper and freeze for 1 hour, or until very firm.

In a shallow bowl, mix the crushed cornflakes, shredded coconut, and ground cinnamon together.

In a separate bowl, whisk the eggs and milk together until fully combined.

Remove the ice cream balls from the freezer. Roll each ball in the cornflake mixture to coat, then dip them in the egg mixture, and roll once again in the cornflake mixture for a double layer. Ensure the ice cream is fully covered. Place the coated ice cream balls back on the baking sheet and freeze for at least 2 hours, or until completely firm.
