Ingredients

  • 4 slices Sourdough bread
  • 2 slices Sharp cheddar cheese
  • 2 slices Gruyere cheese
  • 2 tablespoons Cream cheese
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Honey

Directions

Step 1

Thinly slice the yellow onion.

Step 2

In a skillet, heat the olive oil over medium heat. Add the onion and cook for 10-12 minutes, stirring occasionally, until the onions are golden and caramelized. Add a pinch of salt and the honey during the last minute of cooking. Remove from the skillet and set aside.

Step 3

Spread 1 tablespoon of cream cheese on one side of each slice of bread.

Step 4

Layer 1 slice of sharp cheddar and 1 slice of Gruyere on top of the cream cheese on two of the bread slices.

Step 5

Evenly divide the caramelized onions between the two slices with cheese, spreading them on top.

Step 6

Top each prepared slice with the remaining bread slices, cream cheese side down, to make two sandwiches.

Step 7

Heat 1 tablespoon of butter in the same skillet over medium-low heat. Once melted, add a sandwich and cook for 3-4 minutes, until the bread is golden brown and crispy. Flip gently and cook the other side for another 3-4 minutes, adding more butter if needed.

Step 8

Repeat with the second sandwich.

Step 9

Slice each sandwich in half and serve warm, optionally with a side of tomato soup or a crisp salad.
