Ingredients

  • 1 puff pastry sheet
  • 3 large ripe tomatoes
  • 8 ounces fresh mozzarella
  • 10 pieces fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 0.5 teaspoons kosher salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon all-purpose flour (for rolling)
  • 1 egg
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Lightly dust your work surface with flour and roll out the puff pastry sheet to approximately 10x14 inches.

Step 3

Transfer the puff pastry to the prepared baking sheet. Use a sharp knife to score a 1-inch border around the edges, being careful not to cut all the way through the pastry.

Step 4

In a small bowl, whisk together the egg and water to create an egg wash. Brush the edges of the tart with the egg wash to help it brown during baking.

Step 5

Slice the tomatoes and fresh mozzarella into 1/4-inch thick rounds. Arrange the tomato and mozzarella slices inside the scored border, slightly overlapping each other.

Step 6

Sprinkle the kosher salt and black pepper evenly over the tomatoes and mozzarella.

Step 7

Bake the tart in the preheated oven for 20–25 minutes, or until the pastry is golden brown and puffed up around the edges.

Step 8

Remove the tart from the oven and let it cool for 5 minutes. Top with fresh basil leaves, drizzle with olive oil and balsamic glaze, and slice into portions.

Step 9

Serve warm or at room temperature and enjoy!
