Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 0.25 cups Unsalted butter, cold and cubed
  • 0.75 cups Whole milk
  • 4 cups Vegetable oil, for frying
  • 0.5 cups Powdered sugar (optional, for serving)
  • 0.5 cups Jam or preserves (optional, for serving)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Stir to evenly distribute the dry ingredients.

Step 2

Using a pastry cutter or your fingertips, cut in the cold, cubed butter until the mixture resembles coarse crumbs.

Step 3

Gradually add the milk to the dry mixture, stirring with a fork just until a soft dough forms. Be careful not to overmix.

Step 4

Turn the dough out onto a lightly floured surface. Gently knead the dough 6-8 times until it comes together smoothly.

Step 5

Roll the dough out to a thickness of about 1/2-inch. Using a 2-inch round biscuit cutter, cut out as many biscuits as possible, rerolling the scraps as needed.

Step 6

Pour the vegetable oil into a deep, heavy-bottomed pot or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a candy thermometer to monitor the temperature.

Step 7

Carefully lower a few biscuits into the hot oil, being cautious not to overcrowd the pot. Fry the biscuits for 2-3 minutes per side or until they are golden brown and puffed.

Step 8

Using a slotted spoon, remove the fried biscuits from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 9

Repeat with the remaining dough until all the biscuits are fried.

Step 10

Serve the fried biscuits warm, dusted with powdered sugar and/or with a side of jam or preserves for dipping.
