Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoons salt
  • 1 cups buttermilk, room temperature
  • 0.5 cups vegetable oil
  • 2 units large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cups boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans. Grease the pans with butter or nonstick spray, then line the bottom with parchment paper for easy release.

Step 2

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

Step 3

In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.

Step 5

Slowly pour in the boiling water while whisking the batter. The batter will be very thin, but this is what makes the cake extremely moist.

Step 6

Divide the batter evenly between the prepared cake pans and gently tap the pans on the counter to release any air bubbles.

Step 7

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Let the cakes cool in the pans for 10 minutes, then carefully turn them out onto a wire rack to cool completely before frosting.

Step 9

Frost the cake with your favorite chocolate frosting or ganache. Decorate as desired and serve!
