Ingredients

  • 3 lbs Pork loin roast
  • 15 oz Mandarin oranges (canned with syrup)
  • 0.33 cup Soy sauce
  • 2 tbsp Honey
  • 1 tbsp Fresh ginger (grated)
  • 3 cloves Garlic (minced)
  • 2 tbsp Rice vinegar
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 stalks Green onions (sliced thinly for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin roast dry with paper towels and season it with salt and black pepper on all sides.

Step 3

Heat a large oven-safe skillet or Dutch oven over medium-high heat. Place the pork roast in the skillet and sear on all sides until golden brown, about 2-3 minutes per side. Remove from heat and set aside.

Step 4

In a medium mixing bowl, combine the mandarin oranges (with their syrup), soy sauce, honey, grated ginger, minced garlic, and rice vinegar. Stir well to form the sauce.

Step 5

Pour the sauce over the seared pork loin in the skillet. Cover the skillet with a lid or aluminum foil.

Place the skillet in the preheated oven and roast for 60 minutes. Baste the pork with the sauce every 20 minutes to keep it moist.

After 60 minutes, remove the foil/lid and continue roasting uncovered for an additional 15-20 minutes or until the internal temperature of the pork reaches 145°F (63°C).

Carefully remove the skillet from the oven and transfer the pork roast to a cutting board. Let it rest for 10 minutes before slicing.

While the pork rests, place the skillet with the sauce over medium heat on the stovetop. In a small bowl, mix the cornstarch and water to make a slurry. Stir the slurry into the sauce and cook until thickened, about 1-2 minutes.

Slice the pork roast into 1/2-inch-thick slices and drizzle the thickened sauce over the top.

Step 11

Garnish with sliced green onions and serve hot with rice or steamed vegetables.
