Ingredients

  • 4 cups fresh okra, sliced
  • 2 cups canned tomatoes, diced
  • 1 medium onion, chopped
  • 4 slices bacon, chopped
  • 1 cup chicken broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

Directions

Step 1

Heat a large skillet over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving the rendered bacon fat in the pan.

Step 2

Add the vegetable oil to the skillet. Once heated, add the chopped onion and sauté for 3-4 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the sliced okra to the skillet and cook for 5 minutes, stirring occasionally, to reduce the sliminess.

Step 5

Add the diced tomatoes (with their juice), chicken broth, sugar, salt, and black pepper to the skillet. Stir to combine.

Step 6

Lower the heat to simmer and cover the skillet with a lid. Cook for 20 minutes, stirring occasionally, until the okra is tender.

Step 7

Remove the lid and cook for an additional 5 minutes to allow the sauce to thicken slightly.

Step 8

Stir in the crispy bacon pieces and taste for seasoning, adjusting if necessary.

Step 9

Serve hot as a side dish or over rice as a main course.
