Ingredients

  • 1 lb Ground buffalo meat
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tbsp Worcestershire sauce
  • 4 slices Cheddar cheese slices
  • 4 buns Brioche burger buns
  • 2 tbsp Butter
  • 4 leaves Lettuce leaves
  • 2 sliced Beefsteak tomatoes
  • 8 slices Pickles
  • 1 small, thinly sliced Red onion
  • 0.25 cup Hot buffalo sauce
  • 0.25 cup Mayonnaise
  • 1 tbsp Olive oil

Directions

Step 1

In a large mixing bowl, combine ground buffalo meat, salt, black pepper, garlic powder, paprika, and Worcestershire sauce. Mix gently with your hands until just combined. Do not overwork the meat.

Step 2

Divide the mixture into 4 equal portions and shape them into patties about 1-inch thick.

Step 3

Heat a large skillet or grill pan over medium-high heat. Add olive oil to the pan.

Step 4

Cook the buffalo patties for about 3-4 minutes on each side, or until their internal temperature reaches 160°F (71°C). Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.

Step 5

While the patties cook, butter the insides of each brioche bun and toast them on a separate skillet or grill until golden brown.

Step 6

In a small bowl, whisk together the buffalo sauce and mayonnaise to create a spicy buffalo mayo.

Step 7

Assemble the burgers: Spread a generous layer of buffalo mayo on the bottom half of each toasted bun. Layer on a lettuce leaf, a slice of tomato, a buffalo patty with melted cheese, pickle slices, and red onion. Top with the remaining bun halves.

Step 8

Serve immediately, optionally securing each burger with a skewer to maintain its towering structure.
