Ingredients

  • 1 piece (about 4-5 oz) boneless, skinless chicken thigh
  • 3 tablespoons cornstarch
  • 1 large egg
  • 0.25 cup vegetable oil
  • 1.5 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sugar
  • 3 tablespoons chicken broth
  • 2 cloves, minced garlic
  • 1 teaspoon, minced ginger
  • 2 pieces dried red chilies
  • 1 stem, sliced (optional garnish) green onion
  • 0.25 teaspoon (optional garnish) sesame seeds
  • 1 teaspoon water

Directions

Step 1

Cut the chicken thigh into bite-sized pieces and set aside.

Step 2

In a small bowl, whisk the egg. In a separate bowl, add 2 tablespoons of cornstarch.

Step 3

Dip the chicken pieces into the egg and then coat them thoroughly with the cornstarch. Set aside.

Step 4

In a small mixing bowl, combine soy sauce, rice vinegar, hoisin sauce, sugar, chicken broth, and 1 teaspoon of cornstarch mixed with 1 teaspoon water. Stir until smooth to create your sauce and set aside.

Step 5

Heat a small skillet or wok over medium heat and add the vegetable oil.

Step 6

Once the oil is hot (about 350°F, test with a drop of batter—it should sizzle immediately), fry the chicken pieces in batches until golden and crispy, about 4-5 minutes. Remove and drain on a paper towel.

Step 7

Carefully remove most of the oil from the pan, leaving about 1 teaspoon behind.

Step 8

Add the minced garlic, ginger, and dried red chilies to the hot pan. Stir-fry for 30 seconds or until fragrant.

Step 9

Pour in the prepared sauce and let it simmer for 1 minute, stirring occasionally.

Step 10

Add the fried chicken pieces to the pan and toss to coat them evenly in the sauce.

Step 11

Cook for another 2-3 minutes until the sauce thickens and clings to the chicken.

Step 12

Transfer the chicken to a serving plate and garnish with green onion slices and sesame seeds, if desired.

Step 13

Serve immediately with steamed rice or as is. Enjoy your homemade single-serving General's Chicken!
