Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon sweet pickle relish
  • 0.5 teaspoons smoked paprika
  • 0.25 teaspoons ground black pepper
  • 0.25 teaspoons salt
  • 1 tablespoon fresh chives

Directions

Step 1

Place the eggs in a single layer in a medium saucepan and cover them with at least 1 inch of water.

Step 2

Bring the water to a rolling boil over high heat. Once boiling, cover the saucepan, remove it from heat, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to a bowl of ice water using a slotted spoon to stop the cooking process. Let them cool for at least 5 minutes.

Step 4

Peel the eggs under running water, then slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl, setting the whites aside on a platter.

Step 5

Mash the yolks with a fork until they reach a fine, crumbly texture.

Step 6

Add the mayonnaise, Dijon mustard, white vinegar, sweet pickle relish, smoked paprika, ground black pepper, and salt to the yolks. Mix thoroughly until smooth and creamy.

Step 7

Spoon or pipe the yolk mixture back into the egg white halves, dividing the mixture evenly.

Step 8

Sprinkle additional smoked paprika over the filled eggs for garnish, and top with freshly chopped chives.

Step 9

Refrigerate the eggs for at least 30 minutes before serving to allow the flavors to meld together.

Step 10

Serve cold and enjoy The Geezer's Deviled Eggs!
