Ingredients

  • 1 cup Black beans (cooked, drained, and rinsed)
  • 1 cup Quinoa (cooked)
  • 1 medium Carrot (grated)
  • 1 cup Spinach (finely chopped)
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 pieces Burger buns
  • 4 pieces Lettuce leaves
  • 1 large Tomato (sliced)
  • 1 small Red onion (sliced)
  • 0 optional Your favorite condiments (ketchup, mustard, mayo, etc.)

Directions

Step 1

In a large mixing bowl, mash the cooked black beans with a fork or potato masher until they form a chunky paste.

Step 2

Add the cooked quinoa, grated carrot, chopped spinach, breadcrumbs, egg, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the bowl. Mix thoroughly until well combined.

Divide the mixture into four equal portions and shape each portion into a patty about 1/2 inch thick.

Heat a large skillet over medium heat and add the olive oil.
