Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 2 tbsp Olive oil
  • 2 tbsp Hot sauce
  • 2 tbsp Butter
  • 4 Hoagie rolls
  • 4 slices Provolone cheese
  • 1 cup Red cabbage
  • 1 large Carrot, shredded
  • 2 tbsp Mayonnaise
  • 1 tbsp Apple cider vinegar
  • 1 tsp Honey
  • 1 Jalapeño, thinly sliced

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rub the pork tenderloin with salt, black pepper, paprika, and garlic powder.

Step 3

Heat a large skillet over medium-high heat and add olive oil.

Step 4

Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Step 5

Transfer the pork to a baking dish and brush with 1 tablespoon of hot sauce. Place in the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Step 6

While the pork is roasting, prepare the tangy slaw. In a mixing bowl, combine red cabbage, shredded carrot, mayonnaise, apple cider vinegar, honey, and a pinch of salt. Mix well and set aside.

Step 7

Remove the pork from the oven and let it rest for 5-10 minutes before slicing it thinly.

Step 8

In the same skillet used earlier, melt butter over medium heat and stir in the remaining 1 tablespoon of hot sauce. Add the sliced pork and toss to coat in the buttery hot sauce mixture. Heat until warmed through.

Step 9

Lightly toast the hoagie rolls in the oven or a toaster, then layer each with sliced pork, a slice of provolone cheese (allowing it to melt slightly), a generous scoop of slaw, and thinly sliced jalapeños for extra heat.

Step 10

Serve immediately, with extra napkins for this juicy, flavorful sandwich!
