  • 50 g Granulated sugar
  • 10 g Instant yeast
  • 8 g Salt
  • 240 ml Whole milk
  • 60 g Unsalted butter
  • 2 units Large eggs
  • 15 g Sesame seeds (optional, for topping)
  • 1 unit Egg (for egg wash)
  • 15 ml Water (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt. Whisk to evenly distribute the dry ingredients.

Step 2

In a small saucepan, heat the milk and unsalted butter over low heat until the butter is melted and the mixture is warm (approximately 37–40°C or 98–104°F). Do not overheat.

Step 3

In a separate small bowl, lightly beat one of the large eggs. Add the warm milk-butter mixture and beaten egg to the dry ingredients. Stir until a sticky dough forms.

Step 4

Transfer the dough to a lightly floured surface. Knead for 8–10 minutes until the dough becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook on medium speed for about 5–6 minutes.

Step 5

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.

Punch down the dough and divide it into 8 equal portions (approximately 100 g each). Shape each portion into a ball and place them on a baking sheet lined with parchment paper, leaving enough space for the buns to rise.
