Ingredients

  • 4 boneless, skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 yellow onion, finely diced
  • 3 garlic cloves, minced
  • 0.5 cup dry white wine
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness, about 1 inch thick.

Step 2

In a shallow dish, combine flour, garlic powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Dredge each chicken breast in the flour mixture, ensuring it is evenly coated, and shake off any excess flour.

Step 3

In a large skillet, heat 2 tablespoons of butter and the olive oil over medium heat. Once hot, add the chicken breasts and cook for 4-5 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken and set aside on a plate.

Step 4

Reduce the heat to medium-low and add the remaining 2 tablespoons of butter to the skillet. Stir in the diced onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds, stirring frequently.

Step 5

Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes until slightly reduced.

Step 6

Stir in the chicken broth, heavy cream, Parmesan cheese, thyme leaves, and the remaining 0.5 teaspoon of salt and 0.5 teaspoon of black pepper. Simmer for 4-5 minutes, stirring occasionally, until the sauce thickens slightly.

Step 7

Return the chicken breasts to the skillet, spoon some sauce over them, and let them simmer in the sauce for 5 minutes to absorb the flavors.

Step 8

Remove from heat and garnish with chopped parsley before serving. Serve hot and enjoy with sides such as mashed potatoes, rice, or roasted vegetables.
