Ingredients

  • 6 large Egg yolks
  • 3/4 cup Granulated sugar
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cinnamon
  • 1/2 cup Rum, bourbon, or brandy (optional)
  • 3 large Egg whites
  • 2 tablespoons Powdered sugar
  • 0 optional Freshly grated nutmeg (for garnish)

Directions

Step 1

In a medium mixing bowl, whisk the egg yolks until they turn light in color.

Step 2

Gradually add the granulated sugar to the egg yolks, whisking constantly until the mixture is thick and creamy.

Step 3

In a medium saucepan, combine the whole milk, heavy cream, vanilla extract, ground nutmeg, and ground cinnamon.

Step 4

Warm the milk mixture over medium heat, stirring occasionally, until it begins to steam (do not let it boil).

Step 5

Slowly temper the hot milk mixture into the egg yolk mixture by adding small amounts of hot liquid at a time and whisking vigorously after each addition.

Step 6

Once combined, pour the entire mixture back into the saucepan and heat on medium-low until it thickens slightly (thick enough to coat the back of a spoon), about 5-7 minutes.

Step 7

Remove from heat and stir in the optional alcohol, if using. Let the eggnog cool to room temperature, then refrigerate for 2-3 hours or until chilled.

Step 8

Before serving, beat the egg whites in a clean mixing bowl until soft peaks form.

Step 9

Add the powdered sugar to the egg whites and beat until stiff peaks form.

Step 10

Fold the beaten egg whites into the chilled eggnog mixture, creating a light and airy texture.

Step 11

Serve in mugs or glasses, garnished with freshly grated nutmeg if desired. Enjoy!
