Ingredients

  • 4 cups (sliced) yellow squash
  • 1 cup (chopped) onion
  • 3 tablespoons butter
  • 1 large egg
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup (crushed) Ritz crackers
  • 0.5 cup (grated) parmesan cheese
  • 0.5 teaspoon granulated garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 spray (for greasing) olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil spray and set aside.

Step 2

In a large skillet over medium heat, melt the butter. Add the chopped onion and saute until it becomes soft and translucent, about 5 minutes.

Step 3

Add the sliced yellow squash to the skillet with the onion. Season with salt, black pepper, and granulated garlic. Cook for 8-10 minutes, stirring occasionally, until the squash is tender and any excess liquid is evaporated.

Step 4

Remove the skillet from the heat and allow the mixture to cool slightly. In a large mixing bowl, beat the egg, then stir in the sour cream and shredded cheddar cheese until well combined.

Step 5

Fold the cooked squash and onion mixture into the sour cream and cheese mixture until evenly coated.

Step 6

Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 7

In a small bowl, mix the crushed Ritz crackers with grated Parmesan cheese. Sprinkle this mixture evenly over the top of the casserole.

Step 8

Bake the casserole in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.

Step 9

Remove the casserole from the oven and let it sit for 5 minutes to cool slightly. Serve warm and enjoy!
