Ingredients

  • 450 grams Fresh spinach
  • 225 grams Cream cheese
  • 120 ml Sour cream
  • 60 ml Mayonnaise
  • 2 pieces Chipotle peppers in adobo sauce
  • 1 tablespoon Lime juice
  • 2 pieces Garlic cloves
  • 60 grams Grated Parmesan cheese
  • 120 grams Shredded mozzarella cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease an 8-inch baking dish lightly with olive oil and set aside.

Step 2

Rinse the spinach thoroughly and blanch it in a pot of boiling water for 1–2 minutes until wilted. Drain and immediately transfer it to a bowl of ice water to stop the cooking process. Once cooled, squeeze out as much water as possible, then chop the spinach finely.

Step 3

In a food processor, blend the cream cheese, sour cream, mayonnaise, chipotle peppers, and lime juice until smooth and creamy.

Step 4

Finely mince the garlic cloves and stir them into the blended mixture. Add the chopped spinach, Parmesan cheese, half of the mozzarella cheese, salt, and black pepper. Mix everything until evenly combined.

Step 5

Transfer the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining mozzarella cheese.

Step 6

Bake in the preheated oven for 20–25 minutes, or until the cheese on top is golden and bubbling.
