Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 0.5 cup granulated sugar
  • 2 whole large eggs
  • 2 teaspoons pure vanilla extract
  • 1.75 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and creamy. This should take about 2-3 minutes.

Step 3

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

In a separate medium-sized bowl, whisk together the flour, cinnamon, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Stir in the oats by hand using a wooden spoon or spatula. If using raisins or chocolate chips, fold them in now.

Step 7

Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers may still look slightly undercooked, but they will continue to set as they cool.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your homemade oatmeal cookies with a glass of milk or a cup of tea!
