Ingredients

  • 2 pounds Ground beef (80% lean)
  • 0.5 pounds Ground pork
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 0.25 cup Parsley, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to soak.

Step 3

In a large mixing bowl, combine ground beef, ground pork, diced onion, minced garlic, soaked breadcrumbs, eggs, parsley, Worcestershire sauce, Dijon mustard, salt, and black pepper. Gently mix with your hands until just combined. Do not overmix to avoid a dense meatloaf.

Step 4

Shape the meat mixture into a loaf shape on the prepared baking sheet or press it into a loaf pan. Smooth the top to ensure even cooking.

Step 5

In a separate small bowl, whisk together ketchup, brown sugar, and apple cider vinegar to make the glaze.

Step 6

Spread half of the glaze evenly over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 40 minutes. Then, remove it from the oven and spread the remaining glaze on top.

Step 8

Return the meatloaf to the oven and bake for another 20 minutes, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps to retain its juices.

Step 10

Slice and serve with your favorite sides, such as mashed potatoes or roasted vegetables. Enjoy!
