  • 2 lb Yukon Gold potatoes
  • 8 slices Bacon
  • 1 medium Yellow onion

  • 0.5 cup Chicken broth
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley

Directions

Step 1

Scrub the potatoes clean and place them in a large pot. Cover the potatoes with cold water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until they are fork-tender, about 15-20 minutes.

While the potatoes are cooking, prepare the bacon. In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon from the skillet and place on a paper towel-lined plate. Reserve 3 tablespoons of the bacon drippings in the skillet and set aside.
