Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Packed light brown sugar
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter
  • 2 Large eggs
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 0.25 cup Strong brewed coffee
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Espresso powder
  • 0.5 cup Chopped pecans or walnuts (optional)
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan or a 9x9-inch baking pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, combine 2 cups of flour, granulated sugar, baking powder, and salt. Mix well and set aside.

Step 3

In a separate large bowl, beat the butter with an electric mixer on medium speed until light and creamy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Then mix in the sour cream, coffee, and vanilla extract until smooth.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix. Set the batter aside.

Step 6

To make the streusel topping, combine the remaining 1/2 cup of flour, brown sugar, cinnamon, and espresso powder in a bowl. Stir in the chopped pecans or walnuts, if using.

Step 7

Using your fingers or a fork, blend in 1/4 cup of softened butter until the mixture forms small clumps.

Step 8

Spoon half of the cake batter into the prepared pan, spreading it evenly with a spatula. Sprinkle half of the streusel mixture over the batter.

Step 9

Add the remaining batter, spreading it gently to create an even layer, and top with the remaining streusel.

Step 10

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 11

Allow the cake to cool in the pan for 10 minutes. If using a springform pan, carefully remove the sides and let the cake cool completely on a wire rack.

Step 12

Dust with powdered sugar before serving for a finishing touch. Serve warm or at room temperature with a cup of coffee!
