Ingredients

  • 4 pieces Chicken cutlets
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 8 pieces Fresh sage leaves
  • 4 slices Prosciutto
  • 0.5 cups All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 0.5 cups Dry white wine
  • 0.5 cups Chicken broth
  • 1 tablespoon Lemon juice

Directions

Step 1

Place each chicken cutlet between two sheets of plastic wrap or parchment paper, and pound to an even thickness of about 1/4 inch using a meat mallet.

Step 2

Season both sides of the chicken cutlets with salt and pepper.

Step 3

Place two sage leaves on top of each piece of chicken, then wrap each cutlet with a slice of prosciutto. Press lightly to make sure the prosciutto adheres to the chicken.

Dredge the chicken lightly in flour, shaking off any excess.

Step 5

In a large skillet, heat the olive oil over medium heat.

Add the chicken cutlets to the skillet, prosciutto-side down. Cook for 2-3 minutes per side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
