Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 3 tbsp Soy sauce
  • 2 tbsp Cornstarch
  • 2 tbsp Oyster sauce
  • 1 tbsp Hoisin sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 2 tbsp Water
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1 medium Red bell pepper, diced
  • 2 cups Broccoli florets
  • 1 cup Cashews (unsalted, roasted)
  • 2 Green onions, sliced
  • 4 cups Cooked jasmine rice (for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a bowl.

Step 2

In the bowl with the chicken, add 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Mix well to coat the chicken and let it marinate while preparing the other ingredients.

Step 3

In a small bowl, whisk together the remaining soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, and water to create the stir fry sauce. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.

Remove from heat and garnish with sliced green onions.
