  • 4 Large eggs
  • 2 teaspoons Pure vanilla extract
  • 3 cups Grated carrots
  • 1 cup Chopped walnuts or pecans (optional)
  • 8 ounces Cream cheese (softened)
  • 0.5 cups Unsalted butter (softened)
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)
  • 1 tablespoon Milk (optional, to thin frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans or one 9x13-inch pan.

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
