  • 4 medium carrots
  • 3 large russet potatoes
  • 3 celery stalks
  • 4 cups beef broth
  • 3 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 cup frozen peas
  • 2 tbsp all-purpose flour
  • 2 tbsp cold water

Directions

Step 1

Trim excess fat from the beef chuck and cut it into 1.5-inch cubes. Season the beef cubes with salt and black pepper.

Step 2

In a large, heavy-bottomed pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the beef in batches, making sure not to overcrowd the pan. Remove the browned beef and set aside.

Step 3

Dice the onion, mince the garlic, and cut the carrots, potatoes, and celery into bite-sized pieces.

Step 4

Using the same pot, reduce the heat to medium and add the diced onion. Sauté for 3-4 minutes until softened, then add the minced garlic and cook for an additional minute.

In a small bowl, mix the all-purpose flour with cold water to make a slurry. Slowly stir this mixture into the stew to thicken it, simmering for an additional 5-10 minutes.

Stir in the frozen peas during the last 5 minutes of cooking. Taste the stew and adjust seasoning if necessary.
