  • 1 cup Rolled oats
  • 1 cup Desiccated coconut
  • 1 cup All-purpose flour
  • 0.75 cup Granulated sugar
  • 125 grams Unsalted butter
  • 2 tablespoons Golden syrup
  • 1 teaspoon Baking soda
  • 2 tablespoons Boiling water

Directions

Step 1

Preheat your oven to 160°C (320°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, and granulated sugar. Stir until well blended.

Step 3

In a small saucepan, melt the butter and golden syrup over low heat, stirring occasionally, until fully combined.

In a small bowl, mix the baking soda with the boiling water until dissolved.

Step 5

Add the baking soda mixture to the melted butter and golden syrup. The mixture will foam up slightly—this is normal.

Step 6

Pour the wet ingredients into the dry ingredients and mix thoroughly until a firm dough forms.

Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking trays, leaving about 5cm (2 inches) of space between each ball.

Gently flatten each ball using the back of a spoon or your fingers to form discs, about 1cm (0.4 inches) thick.

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown. Rotate the trays halfway through baking for even cooking.

Remove the biscuits from the oven and allow them to cool on the trays for 5 minutes. Then transfer them to a wire rack to cool completely.
