  • 6 medium Russet potatoes
  • 8 slices Bacon
  • 1 large Yellow onion
  • 2 cups Cheddar cheese, shredded

  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Wash and peel the potatoes, then slice them into 1/4-inch thick rounds.

Step 2

Chop the bacon into small pieces and cook in a Dutch oven over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 2 tablespoons of the bacon grease in the Dutch oven.
