Ingredients

  • 2 cups turkey drippings
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups chicken or turkey stock
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons fresh thyme leaves (optional)
  • 2 tablespoons heavy cream (optional)

Directions

Step 1

After roasting your turkey, carefully pour the drippings from the roasting pan into a heatproof bowl or fat separator. Allow the mixture to settle so the fat rises to the top.

Step 2

Skim off the fat using a spoon or separate it using the fat separator. Reserve about 4 tablespoons of the fat for the gravy, or substitute an equal amount of unsalted butter if needed.

Step 3

Place a medium saucepan over medium heat and add the reserved fat or butter. Once melted and bubbling, whisk in the flour to form a roux. Cook for 1-2 minutes, stirring constantly, until the mixture is golden brown and smells nutty.

Step 4

Slowly whisk in the turkey drippings and stock, ensuring there are no lumps. Continue whisking until the mixture begins to thicken.

Step 5

Lower the heat to a simmer and season with salt, pepper, and fresh thyme, if using. Allow the gravy to cook for an additional 5-7 minutes, stirring occasionally, to fully develop the flavors.

Step 6

If desired, stir in the heavy cream for a richer gravy. Taste and adjust seasoning as needed.

Step 7

Remove the gravy from heat and strain through a fine-mesh sieve for a smoother consistency, if preferred.

Step 8

Serve hot over turkey, mashed potatoes, or stuffing. Enjoy your Thanksgiving meal!
