Ingredients

  • 1 loaf French baguette
  • 3 tablespoons Extra virgin olive oil
  • 2 large Garlic cloves
  • 4 medium Roma tomatoes
  • 6 leaves Fresh basil leaves
  • 2 tablespoons Balsamic glaze
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 ounces Fresh mozzarella (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch thick rounds. Arrange the slices on a baking sheet.

Step 3

Brush the top of each baguette slice with 2 tablespoons of olive oil and bake in the oven for 6-8 minutes, or until golden and crispy. Remove from the oven and set aside to cool slightly.

Step 4

While the bread is toasting, finely dice the Roma tomatoes and place them in a medium-sized mixing bowl.

Step 5

Chop the fresh basil leaves into small strips (chiffonade) and add them to the bowl with the tomatoes.

Step 6

Mince 1 garlic clove and mix it into the tomato mixture along with the remaining 1 tablespoon of olive oil, salt, and black pepper. Stir to combine and set aside.

Step 7

Peel the remaining garlic clove and gently rub it over the top of each toasted baguette slice for a subtle garlic flavor.

Step 8

Top each slice with a generous spoonful of the prepared tomato mixture. If using fresh mozzarella, add a thin slice of mozzarella on top.

Step 9

Drizzle balsamic glaze over the bruschetta for added sweetness and acidity.

Step 10

Serve immediately and enjoy the fresh, vibrant flavors!
