In a large bowl, combine the ground turkey, breadcrumbs, egg, minced garlic, grated ginger, soy sauce, fish sauce, salt, black pepper, and chopped cilantro. Mix gently until just combined.
Divide the turkey mixture into 4 equal portions and shape each into a burger patty about 1/2 inch thick.
In a small bowl, prepare the cucumber pepper relish. Combine the diced cucumber, diced red bell pepper, rice vinegar, and sugar. Stir well and set aside.
