  • 1 teaspoon Ginger, grated
  • 1 Lemongrass stalk, finely chopped
  • 1 tablespoon Red curry paste
  • 2 tablespoons Vegetable oil
  • 1 Red bell pepper, thinly sliced
  • 1 Carrot, julienned
  • 2 tablespoons Fresh cilantro, chopped
  • 2 Green onions, chopped
  • 2 cups Jasmine rice, cooked

Directions

Step 1

Rinse the tilapia fillets under cold water and pat dry with paper towels.

In a small bowl, whisk together coconut milk, fish sauce, lime juice, brown sugar, and red curry paste. Set aside.

Heat vegetable oil in a large skillet over medium-high heat.
