Ingredients

  • 4 pieces tilapia fillets
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 2 pieces garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 2 teaspoons red curry paste
  • 2 tablespoons vegetable oil
  • 1 piece red chili, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 2 stalks green onion, sliced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 pieces lime wedges

Directions

Step 1

Pat the tilapia fillets dry with a paper towel and season both sides with salt and black pepper.

Step 2

In a small bowl, whisk together coconut milk, lime juice, fish sauce, brown sugar, red curry paste, minced garlic, and grated ginger until smooth. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat. Add the tilapia fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fish from the skillet and set aside on a plate.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in the sliced red chili and allow it to sizzle for 30 seconds to 1 minute until fragrant.
